The only slow cooker taco recipe you'll ever use

I ran across this recipe in a St. Paul Pioneer Press article by Donna Erickson years ago, and it is still the only beef taco recipe we make. We found a brisket on sale at our local market, cut it into thirds, and this is the result.

Too Good to Be True Slow Cooker Beef Tacos

Makes 6 servings

1 lb chuck roast or beef brisket

Homemade Taco Seasoning Mix: see recipe below.

i medium onion, peeled and sliced

Corn or flour tortillas

To cook meat: Sprinkle both sides of the meat with the seasoning mix to taste. Place it in a slow cooker with onion slices spread evenly over the meat. No need to add water. Cover and set on high. Cook 5 to 6 hours or until meat is tender and easily falls apart. Remove from slow cooker with a slotted spoon.

We bought some homemade pico de gallo at our local market and had tacos just how we like them!

Homemade Taco Seasoning Mix: 1 tbsp. chili powder, 1/4 tsp. garlic powder, 1/4 tsp. onion powder, 1/4 tsp. crushed red pepper flakes, 1/4 tsp. dried oregano, 1/2 tsp. paprika, 1 1/2 tsp. ground cumin, 1 tsp. sea salt. Stir together. Store in an airtight container.
